Thai Potatoes with Mushrooms



  1. Preheat oven to 425 degrees. Lightly grease a rimmed baking sheet.
  2. In a large bowl, add potatoes, oil, salt and pepper. Toss to coat.
  3. Spread potatoes out on an even layer on the baking sheet.
  4. Bake for 25 minutes, until golden brown.
  5. Add the a serving bowl and stir in BlendaBella.
  6. Garnish with freshly chopped cilantro. Serve immediately.
