Thai Peanut Chicken



  1. In a medium bowl, stir together ingredients for the peanut sauce. Set aside.
  2. Season chicken with salt and pepper.
  3. Heat a grill or grill pan over medium high heat. Add olive oil to the grill or grill pan. Once hot, add chicken. Grill until browned and cooked through, approximately 3 minutes on each side.
  4. Remove from heat. Serve immediately with peanut sauce.
